CALIFORNIA-STYLE BUTTER PASTA
Yield: 3 to 4 servings of dish
or 6-8 as a side dish
1 pound (16 ounces) dried or fresh linguini
2 tablespoons salt
butter of California 6 Tablespoons (3/4 stick)
1 cup (4 ounces) of California dry Jack or Parmesan cheese freshly grated
1/4 cup toasted bread crumbs
Freshly ground black pepper to taste
1. In a large (6-8 quart) saucepan boil 4 liters of water. Add the paste and salt.
2. While cooking the pasta, cut the butter into 1-inch pieces and set aside to soften.
3. When the pasta is cooked to your liking, drain in a colander, reserve 1/4 cup of the pasta water. Return drained pasta to the skillet and add half the butter, grated cheese and half of the bread crumbs. Draw, then layer. Add the reserved water pasta to moisten it. Season with freshly ground black pepper.
4. Transfer into a serving bowl or a piece in individual bowls pasta and sprinkle with cheese and bread grated over remaining. Serve immediately.
